Low Calorie – High Protein Banana Muffins

On Sunday night my sweet tooth was SCREAMIN’.

I tried so hard to resist and ignore it.

It wasn’t working 😦

BUT, no worries – Instead, I came up with this quick-fix recipe for HIGH protein banana muffins with LOW calories! Which means NO guilt 🙂

High Protein – Low Calorie Banana Muffins (recipe makes 3 muffins, but you could easily double it!)

Ingredients needed:

  • 1/2 of a medium banana
  • 2 egg whites
  • 1/2 teaspoon of vanilla
  • 1 scoop Whey Protein Powder (I only had Cake Batter flavor on hand, but Vanilla would be a delicious substitute!)
  • 1 tablespoon whole wheat flour
  • 1/4 teaspoon of baking powder
  • 1 – 2 tbsp of Splenda depending on how sweet you like it (or some other sugar substitute)

Directions:

Preheat the oven to 375 degrees and spray 3 muffin tins with non-stick cooking spray.

In a medium bowl, mash up the banana, egg whites and vanilla with a fork (it’s okay if there are a few lumps). Add in the Whey Protein Powder, flour, baking powder and Splenda and mix until combined.

Divide the batter between the 3 muffin tins (about 3/4 full each) and bake for 13-15 minutes until a toothpick comes out clean (the muffins should be a little bit golden-brown on top).

About 75 calories and  11g protein per muffin. 

 

The texture is a bit “angel food cake-like” or “sponge cake-like”. A nice variation would be to add in some oats and cinnamon for a “denser” texture and flavor.
